After reading a festive Highlights article about making pumpkin pancakes, I decided to experiment this morning with my children’s breakfast. On another note, my eight year old daughter thoroughly enjoyed reading the magazine.
Halloween Pumpkin Pancakes
They recommended using the following ingredients to make pumpkin pancakes:
- 1 cup of milk
- 2 eggs
- 2 cups of pancake mix
- 2/3 cup of pumpkin something?
Halloween Pumpkin Waffles
Unfortunately, I did not have all the above ingredients so I improvised. We used the following ingredients to make pumpkin waffles:
- 1/2 cup of milk
- 1 egg
- 1/2 tablespoon of oil
- 1/2 cup of Aunt Jemima whole wheat blend pancake and waffle mix
- 1/3 cup of organic pumpkin
Halloween Recipe Results
Well, my children ate a waffle but they did not ask for seconds like they normally do. Interestingly, we did not notice much of a difference in taste or color. We were hoping for orange waffles. We did notice a difference in substance – the pumpkin made the waffles heavier. I like to establish traditions for each holiday so my children can look forward to special treats. Every Halloween I will make pumpkin waffles but next time I will be sure to use the recommended ingredients.
